Sweet and Sour Chicken




So I made this months ago when I was in a dorm but I just found this picture on my camera and figured why not post it. So I got this recipe from simplyrecipes.com (the link is at the bottom, of course I originally found it through pinterest! )

Ingredients:

- 1 pounds boneless chicken cut into chunks
- 1 egg
- 1/2 teaspoon kosher salt
- 2 teaspoons cornstarch
- 1 10- ounce can pineapple chunks
- 1/4 cup juice from canned pineapple
- 1/4 cup white vinegar
- 1/4 cup ketchup
- 1/2 teaspoon kosher salt
- 3 tablespoons brown sugar
- cooking oil
- 1 red pepper and 1 yellow pepper cut in chunks
- 1 teaspoon grated fresh ginger (I left this out)

1) combine egg white, cornstarch and salt and cover the chicken with it and then let it sit for a few minutes.
2) heat up a frying pan with a little bit of oil in it. fry chicken until it is a little brown and then flip and brown the other side (it shouldn't be entirely cooked) and then put chicken onto a plate with as little oil as possible
3) mix pineapple juice, vinegar, ketchup, brown sugar and salt all together
4) heat up the frying pan and put the peppers, pineapple, ginger and the sweet and sour sauce (from step 3) in the pan. When sauce is bubbling add the chicken back in and cook until chicken is cooked through.

It's really not so hard and its really good!
