(The recipe said they tasted like legit oreos.. I thought they were good but they didn't really taste like oreos)
Ingredients:
1 and 1/4 cups (160g) all-purpose flour
1/2 cup (64g) unsweetened natural cocoa powder
1 teaspoon baking soda
1/8 teaspoon salt
1/2 cup (115g) unsalted butter, softened to room temperature
3/4 cup (150g) granulated sugar
1/4 cup (50g) light brown sugar
1 large egg, at room temperature
1 teaspoon vanilla extract
Mix everything together and allow dough to chill for a half hour. Preheat oven to 350.
When dough if chill place in balls on cookie sheets and flatten a little. Bake for about 8 minutes.
Allow cookies to cool while you make the cream.
Cream:
1/4 cup (60g) unsalted butter, softened to room temperature
1/4 cup (48g) vegetable shortening, room temperature
1 and 3/4 cups (210g) confectioners' sugar
1 teaspoon vanilla extract
I used rich's whip instead of shortening.
Whip up the cream and then spread in the middle of two cookies and enjoy! As shown above I make some of my cookies mint and used green food coloring also.
