Rocky Road Brownie Cups




Crust:

24 oreos
5 tbsp margarine melted

Mix together oreos and margarine in mixer until oreos are totally crushed and you have a nice mixture.

Press the dough into greased muffin tins (or mini muffin tins) and place in fridge while making brownie batter

Brownie:

1/2 cup margarine
2/3 cup sugar
2 eggs
1/2 cup cocoa
1/2 tsp baking powder
1/2 tbsp vanilla extract
3/4 cup flour

Mix together and then fill each brownie cup with some batter.

Bake at 350 for 10-15 minutes

Let cool for a few minutes and then take the oreo-brownie cups out of tin. If you need to use a knife to help.

Topping:

1 cup mini marshmallows
1/3 cup chopped almonds (optional)
1/3 cup chocolate chips
1 tbsp whipping cream

Place a few marshmallows on top of each cup and place back in the oven for just a minute or 2 - until marshmallows get a little puffy. Then place almonds on top if you would like.

Melt chocolate chips and cream together and drizzle on top of the cups!
