I am actually OBSESSED with this recipe!! I have been looking for a homemade caramel sauce for so long that wasn't dairy (I used non dairy whipping cream for the cream)!!!! And this is so amazing I love it and am going to use it in every recipe that calls for caramel sauce from now on!!
It sounds more complicated than it actually is. Just make it once and you will realize it is actually so simple!!
Ingredients:
1 cup sugar
1 tbsp light corn syrup
1/4 cup water
1/2 cup heavy cream - heated
2 tbsp margarine
1/2 tsp fine grain sea salt
1 tsp vanilla extract
Use a sauce pan that has at least a 5 cup capacity. Mix the sugar, corn syrup and water together in sauce pan. Once their all mixed together turn on the oven. Stir constantly until the mixture starts to bubble. Once it starts bubbling stop mixing and just wait. Let the mixture keep cooking until it turns a light brownish color (if you want you can use a candy thermometer and this will usually happen around 340 degrees)
When it turns a light brown immediately take it off the flame cause it can burn very fast.
Immediately pour in the heated cream (Be careful this will bubble insanely for a minute so stand back ... it will stop). Mix mixture together until it is nice and smooth and scrape the bottom to get sugar that may be stuck.
Mix in the margarine and salt.
Let mixture sit for 3 minutes and then mix in the vanilla.
Let cool!
