These are very delicious and everyone loves them.
Recipe:
Cookies:
(In most of my recipes to make the recipe pareve I use Rich's Richwhip Non-Dairy Topping instead of milk)
1 3/4 cups all purpose flour
3/4 cup cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
1 cup sugar
1 large egg
1/2 cup milk
1 teaspoon vanilla extract
Marshmallow layer:
12 large marshmallows, cut in half horizontally
OR
Marshmallow fluff - I like using marshmallow fluff better
Chocolate icing:
2 cups confectioner's sugar
4 tablespoons (1/2 stick) unsalted butter, melted
1/4 cup cocoa powder
1/4 cup milk
1/4 teaspoon pure vanilla extract
OR
Melt Chocolate chips or baking chocolate together with 3 tabs of margarine (add more if needed)
1) Combine all the ingredients for the cookies. Bake on 375 for about 10 minutes. Simply drop cookie dough onto the cookie sheet. (You can make them whatever size you would like). They will spread.
2) Take the cookies out of the oven and put a half a marshmallow on each cookie and place them back in the oven for about 2 minutes (or until marshmallow looks melted and is a little brown) if you are using marshmallow fluff allow cookies to cool off then put some fluff on each cookie (I melt the fluff for a few seconds in the microwave to make it easier to spread)
I would place the cookies in the refridgrater after putting on the fluff to allow the fluff to set before dipping in chocolate
3) Make the chocolate icing or melted chocolate topping. For the icing spread on top of each cookie covering the marshmallow so it will be a surprise when everyone bites into them!!
For the chocolate I find it easier to simply dip the marshmallow part of the cookie into the chocolate. I would then place into the fridge or freezer to harden. I like to dip the cookies twice to give them a nice chocolatey topping. As well you can then use the extra chocolate and drizzle decoratively using a piping bag.
