Espresso Chocolate Cupcakes with Marshmallow Filling







Last week I made these and they were great! I found the recipe on pinterest and I followed it for the cake but the rest of the recipe I did my own way. I have posted the link for the original recipe on the bottom of this page so feel free to check it out! Below is the recipe I used! 

Step 1: Making the cake

The recipe was meant to make real cupcakes but I don't like making fullsize cupcakes because I feel like no one really wants something so big so I made mini cupcakes!

Cake recipe: 
2 eggs
1 cup flour
3/4 cup sugar
1/2 cup sour cream (I used 1/2 whipping cream instead)
1/2 cup vegtable oil
1 tsp baking soda
1 tsp vanilla
Mix together!
In a separate bowl :
1/2 cup boiling water
1/3 cup chocolate chips
1/3 cup cocoa
1 tbsp espresso powder (or any instant coffee, I put in about double the amount you can out in as much or as little as you want!) 
Mix until everything is dissolved and chocolate chips are melted. (If their still a little chunky that's fine as long as their basically melted) 
Pour mixture in with the other mixture and mix together.
Spray your cupcake tins and pour in the batter! 
(I made about 70 mini cupcakes I think the original recipe said it makes about 12 normal cupcakes)
bake at 350 for about 10 minutes for mini cupcakes and about 20 minutes for big cucpcakes
When cupcakes are done take out of tin to cool.


Step 2: Making a hole! 



If you are making normal size cupcakes you can probably use a corer to make a hole. For mini cupcakes I simply took a knife and cup a hole into my cupcake! You want to be careful NOT to go all the way through to the bottom. 

Step 3: Filling the hole



The real recipe had an entire recipe for the filling including gelatin and other stuff. I just used plain marshmallow fluff. I put my marshmallow fluff into the microwave for about 30 seconds and then I poured it into a piping bag and piped it into the hole. The marshmallow fluff will be absorbed into the cake a little so you can fill it a little over the top if you would like


Step 4: Chocolate icing



I just melted chocolate chips with margarine and then I dipped the cupcake into the bowl of chocolate. I then placed the cupcakes on a cookie sheet and put them in the fridge to harden the chocolate.  


Step 5: Marshmallow decorations


You don't have to do this or you can do something else. I melted more marshmallow fluff and poured it in to the piping bag and piped some lines onto the top. I decided to do this because since I made a thinner chocolate icing the hole in the cupcake was still noticeable and the cupcakes look better this way!
