Parshas Noach - Rainbow Cookies



For Parshas Noach I made rainbow cookies to represent the rainbow after the mabul! These really were not hard to make, they do take a bit of time though since there are a few steps. Recipe: 
3/4 cup margarine - softened
1 1/4 cup confectioners sugar 
1 tsp vanilla extract
3 egg yolks
2 1/2 cups flour

(I doubled the recipe because it isnt such a big recipe) 

Beat margarine until its a little smooth, mix in confectioners sugar and mix. Next add the egg yolks and vanilla. Last add the flour. (I will work even if you just pour in all the ingredients but it will be harder to mix) 

Divide dough - take 1/3 of the dough and leave it white. Divide the rest of the dough into the amount of colors you are using for the rainbow and dye each part the colors you want. 

Chill dough for an hour. 

Make an egg wash by mixing 1 egg white and 1 tsp of water together. 

Take the first color and roll it into a rectangle. If you watch the video they tell you how to figure out the measurements based on the cookie cutter you are using. I just guessed and made it work! You want it to be a little thick. Don't roll it to thin. Once you are done the first color roll out the next color. Then put some egg wash on top of the first color and place the second color on top. Continue until you have used all the colors. Once all the colors are nicely piled on top of each other take your rolling pin and gently roll once or twice over the entire pile of colors and make them more connected.

Chill log for an hour.

Cut off the uneven edges of the log. Then cut log into sections based on the depth of your cookie cutter. It should be slightly shorter than the depth of your cookie cutter. You want to cut the strips in the short direction so you have blocks of rainbow. Cut out hearts (or anyshape) from each strip .. You may only be able to get about two shapes from each strip and then I just smooshed the left overs together and made fun colored ball cookies.

Once you are done cutting out all the hearts "glue" them all together using the egg wash. I made three separate  groups of hearts because it was a lot to put them all together.

Chill dough for a half hour.

Preheat oven to 325

Take the white uncolored dough and make strips out of it. Place the strips around the hearts until they are all covered and gently roll the log so the dough comes together as one in a circular shape. Put some egg wash on the outside of the log and then roll the log in sprinkles!

Chill for 15 minutes.

Slice log and place on cookie sheet.

Bake for 10-15 minutes - until cookies are a little golden.
