Pumpkin Butterscotch Cake




So I didn't have butterscotch chips for this so I replaced with white chocolate chips and it was great!

Recipe:
Cake: 
1 cup butterscotch chips
2 cups flour
1 3/4 cup sugar
1  tbsp baking powder
2 tsp cinnamon
1 tsp pumpkin pie spice 
1 cup pumpkin (from a can.. or fresh pureed if you have!)
1/2 cup oil (or applesauce)
3 eggs
1 tsp vanilla

Streusel:

1/2 cup brown sugar
3 tsp cinnamon
1 tsp pumpkin pie spice
1/4 cup pecans (I used white chocolate chips instead)

Preheat oven to 350. Melt the butterscotch chips on the stove or in the microwave and set aside. Mix all the cake ingredients together including the melted butterscotch chips. In a separate bowl mix all the streusel ingredients together. Grease a bundt pan VERY well (I use baking pam and it is great!). Pour half the cake batter into the well greased pan. Then spread the streusel on top of the batter. Pour the remainder of the batter on top of the streusel. 

Bake for 60 minutes. You may need more or less time depending on your oven and pan but you do not want to overcook the cake. I would put it in for 45 minutes and then check on it. 

I wanted to make a glaze so I made homemade caramel sauce and mixed it with a little confectioner sugar and drizzled it on top of the cake.
