Peanut Butter Pie


***You can use a whipping cream for all parts of this recipe where is calls for heavy cream or whipping cream. Its a pretty simple recipe where most things will work!

Recipe:
1 graham cracker crust 

Chocolate layer:
1 1/3 cup chocolate chips
2/3 cup heavy cream (I use richs whip)
2 tbsp corn syrup

Peanut butter layer:
6 ounces peanut butter chips
3/4 cup heavy cream (I use richs whip)
2 tbsp peanut butter
1 cup whipping cream
2 tbsp sugar

Combine all the ingredients for the chocolate layer and microwave until the chocolate is melted. Mix together until smooth and pour into crust. Freeze for 20 minutes. 

Melt the peanut butter chips and 3/4 cup heavy cream together, once melted mix in the peanut butter. Whip the remaining 1 cup whipping cream together with the 2 tbsp sugar (You can also choose to skip the whipping step and it will still be awesome!) Pour whipped (or unwhipped) cream/sugar mixture into the peanut butter chip mixture and mix together. Pour on top of the chocolate layer and freeze. 

If you are making a lot of these pies at once I found that if I made 2 recipes of the peanut butter layer it really filled about 3 pie crusts unless you wanted it all the way to the tippy top! 

Melt chocolate chips and drizzle on top of the pie.

Serve frozen!
