Mini Apple Pies




Recipe:

Pie Crust:
1 1/8 cup all purpose flour
1/2 tsp salt
1/4 cup sugar
1 stick margarine cold
About 3 tbsps ice water plus more as needed

Mix all the ingredients together and add as much water as needed until the dough forms into a ball.Refrigerate the dough for 30 min.

Apple filling:
4 medium apples\
1/4 cup sugar
1 tbsp cinnamon
1 tbsp cornstarch or flour

Core apples and cut into very small pieces. Mix with sugar, flour and cinnamon. Pour apple mixture into a saucepan and cook on medium heat until the apples are slightly soft and the mixture is thick and sticky. 

Allow apples to cool

Topping

2 1/4 cup flour
2/3 brown sugar
2/3 cup sugar
2/3 cup oats
2 sticks melted margarine

Preheat oven to 350. Mix all ingredients together for the topping.

Spray muffin tins. Roll of the pie crust on a floured surface. I made these in mini muffins tins but you can also make them in normal size muffin tins. Cut out the appropriate sized circle for whatever pan you are using. The circle can go up a little on the edges or it can remain fully flat and more cookie like in the muffin tin. Place cut out circles in the muffins tins. Scoop some apple filling into the pie crust, enough apple filling to cover the pie crust circle.Sprinkle topping on top of the apple filling.

Bake for about 15 minutes or until the topping is a nice golden color. Let the apple pies sit for about 10-15 minutes before removing from pan.
