Parshas Bo - Moon Cookies


This weeks parsha is Parshas Bo. In the parsha there are multiple mitzvos which are given to the Jews. One of the mitzvos is making a lunar calendar. 

Recipe:  
1 cup margarine
2 eggs
3 cups flour
1 1/2 cup sugar
2/3 cup baking cocoa
1/2 tsp baking powder
1 tsp vanilla

Mix everything together and chill dough for an hour. 

Preheat oven to 350. Roll out the dough and cut out moons with a moon cookie cutter. Using a lollypop stick or any sort of stick I punched out an eye for the moon to make them cuter! Place cookies on a lined cookie sheet. Bake for 10 minutes. Allow cookies to cool. 

Mint chocolate glaze:

Melt chocolate chips and mix in 1 tsp of mint extract (or however much you would like) 
Drizzle on cookies or dip cookies into the chocolate. 

Since there was a lot of dough I made some cookies round - flatten them a little before placing in the oven- and drizzled with Mint chocolate glaze.
