Parshas Vayeshev - Birthday cake


Happy Birthday to Pharaoh! In Parshas Vayeshev Pharaoh's Birthday is mentioned! So I made a mint chocolate chip birthday cake!


Recipe:
Cake:
1 3/4 cup flour
2 cup sugar
1 cup unsweetened cocoa
2 eggs
1 cup milk (I used water)
1 1/2 tsp baking powder
1 1/2 tsp baking soda
2 tsp vanilla
1/2 cup applesauce
3/4 cup boiling water

Preheat oven to 350. Mix all ingredients together , add the boiling water last. Divide batter into 2 8 or 9inch greased round pans.

Bake for 30 minutes or until a toothpick comes out clean. Allow cakes to cool while making to icing - do not ice cakes until cakes are TOTALLY cooled.

Frosting:

1 cup margarine
1/3 cup heavy cream
2 tsp mint extract (May use extra)
4 cups powdered sugar
2 oz chocolate chopped
green food coloring

Use a mixer with the whisk attachment and beat the margarine until it is creamy. Add in the sugar and heavy cream. Mix together. Add in the chopped chocolate, mint extract and as much food coloring as you would like. Mix together until it has a nice thick but creamy consistency. If needed add more sugar for a thicker consistency.

When cake is cooled take one cake and place it on a plate. Ice the top of the cake. Then plan the second cake on top and ice the rest of the cake. If you would like you can melt some chocolate and drizzle on top. As well I decided to add chocolate chips to the sides. Just take some chocolate chips and press them into the side of the cake!
