Recipe:
3 eggs
1/4 cup margarine - cold and cubed
2 cups flour
1/2 cup sugar
1/2 cup brown sugar
1 tsp baking powder
1 tsp instant coffee granules
1/2 tsp cinnamon
2 tbsp coffee liqueur
1 cup chocolate chips
Preheat oven to 350.
Mix everything together with a mixer.
Divide dough into 4 pieces. Form each dough into a log. They will usually spread. Place logs onto lined cookie sheets. Bake 20-30 minutes until logs are firm on top. Allow logs to cool then slice diagonally. Place slices , sliced side down onto the cookie sheets and bake for another 10 minutes. Flip slices over onto the other side and bake another 10 minutes or until slices are hardened.
Allow Biscotti to cool and then you can glaze them if you would like.
I used 2 glazes, a chocolate one and a coffee one.
Chocolate :
Melt chocolate and mix in some melted margarine until it is thin enough to drizzle
Coffee:
Mix coffee liqueur and confectioners sugar together until it is the right consistency to drizzle.
Pour glazes into piping bag and drizzle onto biscotti!
