Streusel Swirled Butterscotch Bundt Cake




Recipe:

Cake: 

4 eggs
1 cup brown sugar
1/2 cup sugar 
2 cups flour
1/2 cup applesauce
1 tsp vanilla
2 tsp baking powder 
1 cup milk - can use water or non dairy milk substitute 

Streusel:
3/4 cup oats
1/4 cup brown sugar
1/4 cup flour
1/2 cup butterscotch chips - can also use white chocolate chips 
1/4 cup oil 

Butterscotch Icing:
3/4 cup butterscotch chips or white chips 
1 1/2 tbsp milk - used non dairy whipping cream instead 

Preheat oven to 350. Grease bundt pan VERY well! 

Mix together the cake. In another bowl mix together the streusel. 
Pour 3/4 of the batter into the greased bundt pan. Sprinkle the streusel over the batter in the bundt pan. Pour the remaining batter over the streusel. 

Bake for 45 minutes. Allow cake to cool completely when done. 

Mix together the icing and pour over cake when cooled.
