Parshas Mikeitz - Corn Muffins



This weeks parsha is Mikeitz! In Parshas Mikeitz Pharaoh has 2 dreams. One of the dreams is about 7 skinny corns eating 7 fat corns. So for this weeks parsha I made corn muffins!!! 

The best corn muffin recipe is the one right off the Quakers corn meal box. I always use it and they come out so delicious! 

Makes 1 square pan (8 or 9 inch) or 11 muffins 

Ingredients: 

1 1/4 cups flour
3/4 cup corn meal
1/4 cup sugar
2 tsp baking powder
1 cup skim milk (I replaced with either a non dairy creamer or water)
1/4 cup vegetable oil (I replaced with the same amount of unsweetened apple sauce and they came out super moist!)
2 eggs whites or 1 egg

Preheat oven to 400. 

Add all the ingredients together. Pour batter into either lined muffin tins or greased pans. 
Bake for 10 minutes for muffins and 20 for a square,you dont want them to over cooked and dry so it's better to put them in for less time and check on it and add time then put them in for a long time at first.
