Ingredients:
Biscotti:
4 ounces chocolate chips
1 stick margarine
2 large eggs
2 cups flour
1 cup sugar
1/2 cup cocoa powder
- If you use natural cocoa powder use 1/2 tsp baking soda instead of baking powder
2 tsp baking powder
2 tsp vanilla
1/2 cup chocolate chips
1/2 cup caramel bits
1/2 cup chopped peanuts
Icing:
2 cups confectioners sugar
1 cup caramel
2 tbsp heavy cream
Chopped peanuts
Drizzle:
4 ounces chocolate chips
2 tbsp margarine
Preheat oven to 300. Place chocolate into food processor and grind until it is in small pieces. Cream together the sugar and butter in a mixer. Add the flour, cocoa, baking powder, ground chocolate, eggs and vanilla together with the butter mixture and mix. Add in the chocolate chips, caramel and peanuts. (I left out the caramel because I didn't have and they were still delicious!) Divide the dough into 2 or 3 pieces and form into logs. They will spread so I like the make my logs thin so they don't end up huge! Bake for about 30 minutes or until logs are firm but not hard.
When logs are cool cut into diagonal slices. Place the pieces on their side and return them to the oven for another 30 minutes or until cookies are dry and crunchy!
To make the icing I used homemade caramel or you can melt caramel cubes. Use an electric mixer with the whisk. Add the melted caramel, confectioners sugar, and heavy cream. Mix until the consistency is to your liking. When the biscotti are cool spread some icing on top of each one. Sprinkle with chopped peanuts.
Melt the chocolate and margarine together and place in a piping bag. Pipe over the biscotti and enjoy!
