Lemon Brownie Bites




Ingredients:

Brownie:
1/2 cup chocolate chips
1/4 cup margarine
1 egg
1/3 cup sugar
1/2 cup flour
1 tsp vanilla
1/2 tsp lemon zest
1/4 tsp baking powder

Lemon Frosting:
2 tbsp margarine
1/4 tsp lemon zest
1 1/3 cup confectioners sugar
4 tsp fresh lemon juice

Chocolate Topping:

1/2 cup chocolate chips
3 tbsp margarine

Preheat oven to 350. Melt together the 1/2 cup chocolate chips and 1/4 cup margarine either in the microwave or on the stove. When it is all melted add in the rest of the ingredients and mix. Pour batter into greased muffin pans (I used mini ones). Make sure they are greased very well or use muffin liners, whichever you prefer. Bake for about 10 minutes.

While they bake make the lemon frosting.
Beat the 2 tbsp of butter and the lemon zest together in a mixer. Add the confectioners sugar and lemon juice. If it isn't thick enough add more confectioners sugar. When the thickness is to your liking put the icing in the pastry bag and wait for the muffins to be done and cooled.

When the muffin are cooled pipe some of the lemon frosting onto each one and chill while making the chocolate topping.

To make the chocolate topping melt together the chocolate chips and margarine. Dip each muffin into the chocolate. If the chocolate is too thick add some more margarine. If its too thin add some more chocolate. I like to dip them twice to make a thick chocolate layer.

Since I had some extra lemon frosting I added some water to make it thinner and then drizzled it over the chocolate once it was cooled.

An entire tray of my muffins stuck to the pan so I mashed them up into a pie dish and made a crust out of them. I then filled the crust with the lemon frosting and covered it with chocolate!
