You can make this recipe as one big pie or as minis. I like things mini because they look super cute and everyone is willing to try one because they are so small!
Ingredients:
Pie Crust:
1 1/8 cup flour
1/2 cup sugar
1 stick margarine
about 3 tbsp water - if needed add more
Peanut butter topping:
1/4 cup margarine
1/4 cup peanut butter
1/4 cup brown sugar
1/2 cup flour
peanuts
Brownie:
3 oz baking chocolate
3/4 cup margarine
1/2 cup sugar
3/4 cup flour
2 tbsp cocoa
1 cup brown sugar
3 eggs
2 tsp vanilla extract
Preheat oven to 350. Make the pie crust and set aside.
Make the peanut butter topping:
Mix together everything except the peanuts in a mixer. Then mix in the peanuts. Chill until ready to use.
Brownie:
Melt the chocolate and margarine together. Add in the remaining ingredients and mix.
Grease pans VERY well!
If you are making one big pie press the pie crust into a pie dish. Pour in the brownie mix and then sprinkle the peanut butter topping over the brownie.
To make minis I cut out small flowers from the dough and then pressed each one into a very greased mini muffin cup. You can also just use a small circle and cut out circles for the minis. Then fill each mini with some brownie batter and the sprinkle some peanut butter topping.
Bake the big pie for about 40 minutes and the minis for about 10. For the minis when the pie crust looks crisp and golden they should be done.
Allow to cool and if you would like you can drizzle with some melted peanut butter.
