Triple Layer Peanut Butter Cups






These are super cute! Now that I realized how to make the chocolate cups I definitely plan to use that and fill it with different things other than this recipe.

Recipe:

Chocolate Chip Cake:

Preheat oven to 350 
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoons water
1/2 cup (1 stick) unsalted butter, softened
1/4 cup granulated sugar
1/2 cup packed brown sugar
2 teaspoons vanilla extract
1 large egg
1 cups semi-sweet chocolate chips

Mix together and spread in a 9x13 pan. Bake for 20 minutes. 

When it is finished allow to cool very well.

While that cooks you can start making the chocolate cups. 

Chocolate Cups:
I used a baking chocolate bar which was 15 oz. I just melted it without mixing anything it. I melted it on the stove and not in the microwave because I feel like it melts move evenly and then I did not have to mix any margarine or anything in to make it smooth. You don't want to mix anything in because then the chocolate will be thinner and it will just run down the cupcake liner and not stay up as well. 
I used mini cupcake pans and holders because I like doing everything in mini pans. I think it makes them look cuter and nicer and people are more willing to try it because its not so big. You can make it in big cupcake pans if you would like.
When the chocolate is melted use a small spoon and just spread the chocolate inside each cupcake holder. I put a spoonful of chocolate in the bottom of each holder and then lifted it up and on to the sides from there and of course make sure the bottom is also covered. Using my 15 oz. chocolate bar is was a perfect amount to fill 60 mini cupcake holders. 
After you make your chocolate cups put them in the fridge to chill.

When the cake it totally done chilling make the cookie dough. 

Cookie dough:
1 (1/2 cup) stick butter
1/2 cup brown sugar
2 tablespoons heavy cream or coconut milk
1 teaspoon vanilla extract
3/4 cup flour
1/4 teaspoon salt
1/2 cup mini chocolate chips

Mix together. Mine was a little soft so I chilled it for a few minutes. 

Assembling the cups:

Take the cupcake trays out of the fridge. Take the chocolate chip cake and break it into pieces. Press a piece into each chocolate cup. Next take a piece of cookie dough and press into each cup. I only used about 3/4 of both my cookie dough and cake. 

Peanut Butter Layer:
Melted some peanut butter. I just did a few huge spoonfuls at a time and if I needed more I melted more. I used a piping bag . I put my peanut butter inside a piping bag and piped some onto each cup - it should basically fill it to the top. 

Top Chocolate layer:

This is the last step. Melt some more chocolate! I used about half a baking bar which is 7.5 ounces and it was a perfect amount. When the chocolate is melted spoon some chocolate onto each cut and spread it so the entire thing is covered. Chill cups. When they are done chilling they are ready to eat!
